I'm not vegan but I keep buying this because it's just good mac. The chickpea base makes it feel a little lighter than the boxed stuff, and it comes together in one pot with almost no effort. My kids had no idea there was no dairy in it.

I was skeptical about a chickpea mac tasting this creamy, but the cheddar sauce is genuinely rich and the pasta cooks up fast enough for a weeknight. My kids asked for seconds, which never happens with the boxed stuff I used to buy.

The chickpea-based noodles hold up way better than I expected, and that rich cheddar sauce means I don’t even miss the dairy. It’s my new weeknight go-to when I need something hearty without any fuss.
